Being super busy is a sure sign of fall. Last Saturday was firewood-cutting. Sunday eveing was "Cowboy Church" a church service held down at the Lincoln County fairgrounds. Because it was raining, there weren't many who brought their horses to ride. But afterward we had a homemade ice cream social. Below is the experiment I tried. It must have been good! There was none left. Monday Mr. Wonderful spent the entire day splitting the wood, and I spent most of the day stacking the wood. Wednesday I did a quick fruit run. I picked up corn, tomatoes, peaches, and pears. The corn is in the freezer. And I will start canning, freezing, and drying peaches this afternoon.
Chocolate Chocolate Chip Ice Cream
4 quarts
Melt and then let cool while mixing ice cream: 3 squares of Semi-sweet baking chocolate
2 cups sugar
3 large eggs or 4 medium eggs
1 Tbs vanilla
Beat above until creamy.
Add 1 cup heavy cream
1/8 tsp salt
2-3 cups chocolate milk (I used chocolate milk from the local dairy–Shumways, it is very rich and creamy.)
Pour into ice cream maker. Stir ice cream mixture with a long handled spoon while pouring in the melted semi-sweet chocolate. It wil make threads of chocolate chips. Add enough additional chocolate milk to your freezer's fill line. Follow manufacturer's directions to freeze.
