Chocolate Beet Cake with Fudge/Peanut Butter Frosting

Today I picked several pounds of beets that are now in the process of being canned. This is one recipe that uses beets. I got the recipe from my mom.

Chocolate Beet Cake
oven 350ยบ
Spray or grease and flour a 9" x 13" cake pan

Mix dry ingredients together:
2 tsp. baking soda
1 tsp. salt
2/3 cup baking cocoa
1 1/2 cups sugar
2 1/2 cups flour

Add all other ingredients. Mix thoroughly.
2 cups blended, cooked and skinned beets. (This is about 3 cups of canned beets, drained.)
1 1/2 tsp. vanilla
4 eggs
1 1/2 cups oil

Bake for 35 to 40 minutes


Fudge/Peanut Butter Frosting
I came up with the recipe for one of my sons birthday cakes.

1/2 cup peanut butter
1/2 cup baking cocoa
about 2 cups powdered sugar
1 1/2 tsp vanilla

Mix. Add cream to make spreading consistency.
