Chocolate-Chocolate Chip Muffins

Here is a delicious recipe to use that flop cottage cheese or sour cream.

Oven 375°F 20 minutes for 10 jumbo (Less time for smaller sizes)
Grease pan(s)

Melt together:
12 oz. Semi-sweet chocolate chips or 3/4-cup baking cocoa
1/2-cup butter (may substitute 1/4-cup of butter with 1/4-cup of applesauce)

Add 1/2-cup sour cream to chocolate

Beat together in a bowl:
1/2-cup packed brown sugar
4 large eggs (3 eggs if using applesauce)
1 tsp. Vanilla

Add chocolate to sugar-egg mixture

Stir in the following just ‘til moist:
1-cup (more for high altitude) flour
1/2 tsp. Baking soda
1/8 tsp. Salt

Add 1-cup chocolate chips and 1/2-cup chopped nuts if desired

Fill greased muffin cups 2/3 full. Sprinkle tops with more chocolate chips.

Bake. Cool for 5 minutes before removing from pans.
