Time for a garden update. I've been busy harvesting this week. The last of the potatoes were dug on Tuesday night. There are probably about 160 pounds of potatoes in my garage! This year I grew Yukon Gold and Russet Norkotahs. I've been using some of the Yukons to make hash browns and I plan to do some baked potatoes with the Russets for dinner tonight.
Thursday I pulled the last of the beets. Some were very small. Those went to make a batch of pickled beets and the larger ones went into regular beets.
I've also been harvesting green beans. Because it is so late in the year, everything has been later this year, I have to cover them up every night. But there is enough green beans to can several pints every four days. Hopefully we will get enough to last through the winter.
I'm still getting zucchini, broccoli, and some lettuce. And there are carrots, carrots, and more carrots to dig. I hope to try drying some to use in soups, stews, and with meat this winter. Plus, I have lots of onions still to use. I've been pulling them as I need. So there are still alot out there.
