Herbed Foccacia Bread

This bread makes yummy sandwiches with boneless, skinless chicken breasts that have been marinated in Italian Dressing, then grilled. Top with a slice of Jack cheese, lettuce, and tomato.

Mix and knead:
3 1/2 to 4 cups Prairie Gold Flour
3 to 4 cups unbleached flour
1 Tbsp. sugar or 1/2 Tbsp. honey
2 tsp. salt
2 Tbsp. yeast
2 cups + 2 Tbsp. warm water
1/2 cup olive oil

Add towards end of kneading:
1/2 Tbsp minced garlic
2 Tbsp. Italian Seasoning
1 Tbsp. Spicy Spaghetti Seasoning

Allow to rise to double.

Roll out and cut in sandwich size pieces. Cover and allow to rise until double on lined baking sheets.

Brush tops with Olive Oil. Bake at 375ยบ about 35 minutes or until golden brown.

Remove to cooling rack and brush again with Olive Oil and sprinkle with Parmesan. Split to make sandwiches. Best when warm.
