Pizza

Friday night is pizza night at our house. Our recipe is a sweet dough that makes 3 large, thick, filling crusts. Adjust the amount of whole-wheat flour to your family’s taste. You will use about 6-8 cups flour total.

Grind 4 cups Prairie Gold Wheat Berries (Kernels) or have 5 cups whole hard wheat flour ready

In large bowl mix the following 3 items and let sit until starting to bubble.
2 Tbsp. Yeast
1/4 cup fructose or honey
1/2 cup very warm water

Warm 2 cups milk with 1/2 cup unsalted butter. Butter should be soft and starting to melt. Add to yeast mixture when it is bubbly. Also add 2 eggs and 2 tsp. Sea salt

Stir in whole-wheat flour. Knead in unbleached flour (approximately 2 cups). Continue kneading, adding flour if necessary, until gluten is well developed making a soft, slightly sticky dough. Cover and let rise until double.

Heat oven to 450 degrees F.
Divide dough into portions needed. It will easily make 3 large pizza crusts. Keep portions not in use covered.

Roll dough out on oiled (or spray with PAM) breadboard.
Place on greased pizza pan. Prick with fork to prevent bubbles in center and to outline crust edge.
Spread with pizza or Italian sauce.
Top with Parmesan and Italian cheeses.
Top with meat and vegetables as desired.

Bake in preheated oven for 15-18 minutes. This will depend on the size and type of pan you are using.

If you do not want your cheese browned, partially bake for half the time without the cheese, then top with cheese and return to oven for the last half of the time.

Simple Dessert Pizza

Prep dough as for regular pizza. Spread with melted butter or spray with PAM. Sprinkle with cinnamon-sugar. Bake at 400 degrees F for 12-15 minutes. Drizzle with a thin powder sugar glaze in random patterns. Yummy.
