Chocolate Chip Cookies

This is our family's favorite cookie recipe. It makes a fairly large batch.

Cream together in larger mixer bowl:
1 cup shortening
1 cup softened unsalted butter

Add:
1 1/2 cups brown sugar, packed
1/2 cup fructose or 1 cup granulated sugar
1/2 cup granulated sugar

Beat in:
3 eggs

After mixing in eggs, beat on medium speed until light and fluffy.

Mix in:
1 cup whole wheat pastry flour or unbleached flour
2 cups unbleached flour
3 tsp baking soda
1 tsp sea salt
3 tsp vanilla

1 3/4-2 cups more unbleached flour

Oven 375 degrees
9 minutes
Only bake until edges are beginning to turn golden. Let rest on pan for 1-2 minutes before removing to cooling racks.
The center of the cookies will sink as they cool.
